Unbelievably moreish and designed for easy decorating, they’re the perfect accompaniment to any Christmas lunch or dinner – that is, if you can resist eating the lot beforehand!

Ingredients
125g unsalted butter, softened
½ cup caster sugar
½ cup brown sugar
1 egg
1½ cups plain flour
1 tsp ground ginger
50g white chocolate, finely grated
Gold or silver sprinkles or glitter sugar, for decoration
Royal Icing
1 egg white
½ tsp lemon juice
1½ cups icing sugar, sifted
Method for White Chocolate & Ginger Star Cookies
1. Using a stand mixer, cream butter and sugars until pale and fluffy.
2. Beat in the egg until fully combined.
3. Add flour, ginger and grated white chocolate. Mix until a smooth dough forms.
4. Wrap dough in cling wrap and chill for 30 minutes.
5. Preheat oven to 180°C. Roll dough on a lightly floured surface to 5mm. Cut into star shapes.
6. Place on lined trays and bake for 12–15 minutes until lightly golden at the edges. Cool completely on a wire rack.
7. To make Royal Icing, whisk egg white with lemon juice, gradually adding icing sugar until smooth. Divide into two bowls – one slightly thicker for outlining and one thinner for flooding the centres.
8. Pipe outlines onto cooled biscuits, then flood the centres with the thinner icing. Scatter with sprinkles or glitter sugar while still wet. Allow to set completely before serving.
