Shaved Ice Recipes

2. Passionfruit Shaved Ice

Elderflower Jelly and Hibiscus Shaved Ice Recipe

Serves 6

Ingredients

4 gelatine leaves
150g caster sugar
100ml elderflower cordial
KitchenAid Shave Ice Attachment mould set with water
Hibiscus syrup, to serve
Edible flowers, to garnish

Hibiscus syrup

50g hibiscus tea leaves (from tea and health food shops)
500g caster sugar
500ml water

Method

1. Place the gelatine leaves in a small bowl of cold water and soak for 5 minutes.

2. Place the sugar and 450ml cold water in a pan over medium heat and bring to the boil.

3. Keep stirring until the sugar has dissolved and remove from heat.

4. Remove gelatine leaves from the water and squeeze out any excess liquid. Discard water and return leaves to the bowl. Pour over cordial and stir until leaves are dissolved. Allow to cool for 10 minutes.

5. Pour jelly mixture into 6 glasses. Place glasses in fridge and chill for 8 hours or until set.

6. To make the hibiscus syrup, place all the ingredients in a medium saucepan over medium heat and cook, stirring constantly, until sugar dissolves. Increase the heat to high and bring to the boil. Remove from heat and allow to cool for 30 minutes. Strain into a jug, then transfer to a 1.25L bottle. Seal and stand to cool completely.

7. When ready to serve, shave ice using fine blade of the KitchenAid Shave Ice Attachment over top of jelly.

8. Drizzle with hibiscus syrup, garnish with flowers and serve immediately.

Passionfruit Shaved Ice Recipe

Serves 6

Ingredients

Passionfruit syrup
225g caster sugar
250ml water
6 passionfruit, halved and pulp removed

Method

1. For passionfruit syrup, place sugar, water and passionfruit pulp in a medium saucepan over medium heat and cook, stirring constantly, until sugar dissolves. Reduce heat to low and  simmer for 10 minutes. Remove from heat and allow to cool for 30 minutes. Transfer to a jug or bottle and stand to cool completely.

2. Shave ice using fine blade KitchenAid Shave Ice Attachment. Drizzle over passionfruit syrup to taste and serve immediately.
