Raspberry, Coffee and Salted Caramel Ice-Cream Biscuits

This week, we’re showcasing a selection of dessert recipes that are perfect to pair with coffee. On today’s menu: Raspberry, Coffee and Salted Caramel Ice-Cream Biscuits.

Makes 28 cookies

Ingredients

3 cups icing sugar

¾ cup cocoa powder

2-3 tsp salt flakes

3 large egg whites

1 large egg

45gm butter, melted

100gm bittersweet chocolate, chopped and melted

100gm dark chocolate, chopped

3 tbsp cacao nibs

2 tbsp almond meal

Ice-cream ingredients

2 litres best-quality vanilla ice-cream

Raspberry swirl ingredients

125gm raspberries

2 tbsp bakers jam

Salted caramel ingredients

½ cup dulce de leche

¼ cup salted caramel topping

2 tsp sea salt

Coffee ice-cream

600ml thickened cream

395gm condensed milk

⅓ cup strong coffee

⅓ cup chicory extract

Raspberry, Coffee and Salted Caramel Ice-Cream Biscuits Method

1. To make cookies, preheat to 180°C. Stir icing sugar, cocoa powder, and salt in a large bowl; make a well in the centre and gently whisk in egg whites, egg, and butter. Fold in chopped and melted chocolates, cacao nibs and almond meal until just combined. Spoon batter by the tablespoonful onto 2 baking trays lined with baking paper, spaced 10cm apart.

2. Bake, rotating trays once, until cookies are puffed, cracked, and set just around the edges (12 mins).

3. Transfer baking trays to wire racks and let cookies cool on pan (they will firm up).

4. To make coffee ice-cream, combine all ingredients in a stand mixture and beat until combined and slightly thickened (5 mins). Freeze overnight to set.

5. For the other ice-cream flavours, divide vanilla ice-cream into separate bowls and swirl raspberry mixture through one and the caramel sauce through the other. Return ice-cream to containers and refreeze, until firm.

6. Scoop ice-cream and sandwich between two cookies, finish with extra sea salt and serve immediately.
