With a creamy mix of coconut, rum and pineapple, this classic cocktail is just the thing for relaxing outdoors this summer. Quick to make, easy to serve and deliciously tropical, this recipe is perfect as an after-work treat or as a favourite drink for parties under the summer sun.

Ingredients
125ml white rum
500ml chilled pineapple juice
2 cups frozen pineapple, cut into 3cm pieces
125ml coconut cream
1 cup ice cubes
lime slices and small pineapple wedges, to serve
Lime Chipotle Salt
2 tbs flaked salt
1 tsp chipotle seasoning
½ tsp finely grated lime zest
Method for Pineapple and Coconut Pina Colada
1. Add rum, pineapple juice, frozen pineapple, half of the coconut cream, and ice cubes to the Nutribullet Smart Touch Triple-Prep Blending System and blitz until smooth.
2. To make the lime chipotle salt, combine the ingredients on a plate. Use some of the lime to rim the edge of the glasses then rub in salt mix to coat.
3. Coat the inside of each glass with the remaining coconut cream. Pour the pina colada mixture into glasses and serve with a slice of lime or a pineapple wedge.
