Plus, for bonus points, we’re sure she’ll love it if you deliver it to her in bed. After all, it’s the one day of the year that brownie’s count as breakfast, right?

Cook 50 minutes
Latte Brownie Ingredients
300g dark chocolate, chopped
250g butter, chopped
2 single shots (60ml) espresso coffee
250g cream cheese, softened
1/2 teaspoon vanilla extract
1 cup caster sugar
4 eggs
1 2/3 cups plain flour
1/2 teaspoon baking powder

Latte Brownie Method
1) Preheat oven to 170C/150C fan-forced. Grease a 16cm x 26cm slice pan. Line base and sides with baking paper, extending paper 2cm above edges all sides. Place dark chocolate, butter and coffee in a medium saucepan over medium heat. Cook, stirring occasionally, for 4 to 5 minutes or until mixture is melted and smooth. Remove from heat. Cool for 10 minutes.
2) Meanwhile, using an electric mixer, beat cream cheese, vanilla and 1/3 cup sugar until light and fluffy. Add 1 egg. Beat until combined.
3) Add remaining sugar to chocolate mixture. Whisk to combine. Add remaining eggs, 1 at a time, whisking until combined after each addition. Sift over flour and baking powder. Stir to come. Spoon 1/2 the brownie mixture into prepared pan, spreading to cover base. Drop spoonfuls of cream cheese mixture and remaining brownie mixture, alternately on top of brownie mixture in pan. Run a butter-knife through the mixtures, swirling to create a marbled effect. Bake for 45 minutes or until top is firm to touch. Cool completely in pan. Cut into pieces. Serve.
