Italian Lamb Shanks

Italian Lamb Shanks Ingredients

1/4 cup extra virgin olive oil

6 lamb shanks, French trimmed

1 red onion, finely chopped

1 celery stalk, finely chopped

1 carrot, finely chopped

2 thin slices prosciutto, finely chopped

3 garlic cloves, crushed

4 sprigs fresh thyme

2 tablespoons roughly chopped fresh sage leaves

1 litre chicken stock

1 cup dried French-style puy lentils, rinsed

200g cherry tomatoes, halved

1/4 cup fresh flat-leaf parsley leaves

Crusty bread, to serve

Italian Lamb Shanks Method

1) Preheat oven to 170°C/150°C fan-forced.

2) Heat 1 tablespoon oil in a large heavy-based flameproof casserole dish over high heat. Cook lamb shanks, in batches, turning for 5 minutes or until browned all over. Transfer to a large plate.

3) Reduce heat to medium. Heat remaining oil in pan. Add onion, celery, carrot and prosciutto. Cook, stirring, for 5 minutes or until onion has softened. Add garlic, thyme and sage. Cook for 1 minute or until fragrant. Return shanks. Add stock and 2 cups cold water. Bring to the boil. Cover. Bake for 1 hour 30 minutes.

4) Remove and discard thyme sprigs. Add lentils to lamb. Cover. Bake for a further 30 minutes or until lamb is tender, adding tomatoes in the last 15 minutes of cooking time.

5) Sprinkle with parsley. Serve with bread.
