Honey Candied Carrots Recipe

A treat for the tastebuds and the eyes, these lovely Honey Candied Carrots are a perfect side dish idea for Christmas dinner or lunch. Delightfully caramelised and flavoursome, these candied carrots are so versatile and will be right at home amongst any festive spread this year.

Ingredients

1 bunch baby carrots (mixed colours if available), trimmed and scrubbed

2 tbsp honey

1 tbsp olive oil

1 tbsp butter, melted

1 tsp fresh thyme leaves

2 tbsp Greek yoghurt (thinned with 1 tsp lemon juice for drizzling)

2 tbsp pomegranate seeds

2 tbsp parsley, finely chopped

Salt, for seasoning

Method for Honey Candied Carrots

1. Preheat the air fryer to 180°C.

2. Toss carrots with honey, olive oil, butter, and thyme. Season with salt.

3. Place in the air fryer drawer and cook for 18–20 minutes, shaking halfway, until caramelised and tender.

4. Arrange on a platter. Drizzle with yoghurt, and scatter with pomegranate seeds and parsley.

  • Dutch or heirloom carrots give a beautiful colour mix.
  • Toasted cumin seeds or dukkah add an earthy note.
  • Serve warm or at room temperature – perfect for Christmas feasting.
