An Australian Christmas isn’t quite right without seafood aplenty, and these Grilled Lobster Tails fit the bill and then some. Straight from our Season of Christmas 2025 series, this recipe applies a light touch, letting the tender sweetness of fresh lobster come to the fore with a simple but smart seasoning selection.

Ingredients
4 cooked lobster tails or halves, split lengthways by the fishmonger
Olive oil, for brushing shells
100g unsalted butter, softened
2 garlic cloves, minced
2 tbsp parsley, finely chopped
1 tbsp chives, finely snipped
1 tsp lemon zest
1 tbsp lemon juice
Salt, for seasoning
Lemon wedges, to serve
Method for Grilled Lobster Tails
1. Preheat grill (or oven grill) to high. Line a baking tray with foil and lightly brush lobster shells with olive oil to prevent scorching.
2. Make the butter: In a small bowl, combine softened butter with garlic, parsley, chives, lemon zest, lemon juice and a generous pinch of salt. Mix until well combined.
3. Grill the lobster: Arrange the halved, cooked lobster on the tray, flesh side up. Spread the garlic–herb butter generously over the lobster meat.
4. Place under the hot grill for 6–8 minutes or until the butter is bubbling and lightly golden in spots and the lobster is heated through.
5. Serve: Spoon over some of the melted butter from the tray, season lightly with salt and serve immediately with lemon wedges.
Handy Hints for your Grilled Lobster Tails
- For a deeper flavour, add a pinch of smoked paprika or cayenne to the butter.
- Ensure lobsters are at room temperature before grilling so they heat evenly.
- Serve with crusty bread or a simple green salad to soak up the buttery juices.
