Air-Fryer Spatchcocks with Prosciutto, Pear and Pumpkin Recipe
Serves 4-6 // Prep and cook: 1 hr 15 mins
Ingredients
4 spatchcocks (about 500gm each)
8 prosciutto slices
1 orange, thinly sliced
4 golden shallots, halved
2 small pears, halved and seeds removed
1 garlic bulb, halved horizontally
4 thyme sprigs
3 star anise
2 cinnamon quills
2 bay leaves
250ml (1 cup) chicken stock
125ml (½ cup) port
80ml (⅓ cup) Sherry vinegar
Extra-virgin olive oil spray
1kg Jap pumpkin, cut into 2cm wedges
1 tbsp finely chopped rosemary, plus extra fried leaves to serve
Herb butter
60gm softened unsalted butter
2 garlic cloves, finely chopped
2 tsp finely chopped thyme
Method
1. For herb butter, combine all ingredients in a bowl.
2. Rinse skin and cavities of spatchcocks and pat dry with paper towel. Rub herb butter over spatchcocks. Wrap two slices of prosciutto across each breast and secure underneath with a toothpick. Truss legs with kitchen string.
3. Preheat air-fryer to 180°C. Arrange orange slices over the base of your Ninja Foodi XL Air Fry Oven roast tray. Arrange spatchcocks, shallots, pears, garlic, herbs and spices on top of orange slices. Add stock, port and vinegar to the tray. Spray spatchcocks with olive oil and season to taste.

4. Arrange pumpkin wedges in an air-fryer basket tray, spray with olive oil, scatter with rosemary and season to taste.
5. Place spatchcock on the level 4 and pumpkin on the level 2 of your air-fryer oven. Roast until spatchcock and pumpkin are golden and cooked (30-35 minutes). Transfer spatchcock and fruit to a platter, cover loosely with foil and rest (10 minutes).
6. Strain pan juices into a large frying pan. Bring to the boil over high heat and cook until reduced to a thin sauce (2-3 minutes).
7. Serve spatchcocks with roast pear, shallot, orange slices, roast pumpkin and pan juices.

Cucumber and Coriander Salad with Sesame-Ginger Dressing and Spring Onion Recipe
Serves 8-10 as a side // Prep and cook: 25 mins
Ingredients
4 Lebanese cucumbers, coarsely chopped
250gm baby cucumbers (cukes), coarsely chopped
1 cup coriander leaves
2 spring onions, cut into julienne
Toasted sesame seeds, to serve
Sesame-ginger dressing
2 small garlic cloves, crushed
1 tbsp finely grated ginger
2 tbsp grapeseed oil
2 tbsp soy sauce
2 tbsp rice vinegar
1 tbsp sesame oil
2 tsp honey
Method
1. For sesame-ginger dressing, place garlic, ginger and oil in a small saucepan over low heat and cook until fragrant and light golden (5 minutes). Remove from heat and carefully add the remaining ingredients. Cool to room temperature (20 minutes).
2. To serve, arrange the cucumber and cukes in a serving bowl. Drizzle with dressing and top with coriander, spring onion and sesame seeds.
