Nothing really says Christmas more than the combination of sweet spices and fruit. It’s that timeless pairing that underpins so many of our Christmas favourites, including fruit mince pies and of course, the classic Christmas pudding.
This fantastic cocktail from the delightful Harvey Norman Season of Christmas 2025 recipe series draws on the same principle for a result you won’t be able to get enough of. Ingredients
2 ripe pears, thinly sliced (plus extra slices for garnish)
½ cup caster sugar
½ cup water
½ tsp ground cinnamon
120ml vodka (or spiced rum for variation)
60ml fresh lime juice
400ml ginger beer, chilled
Ice cubes
4 cinnamon sticks, to serve
4 sprigs fresh thyme, to serve
Method for Spiced Pear Mules
1. Place pears, sugar, water and cinnamon in a small saucepan. Simmer over medium heat for 8–10 minutes until pears soften and a light syrup forms. Strain, pressing pears lightly. Chill syrup.
2. Fill tumblers with ice. Add vodka, lime juice and 30ml pear syrup to each glass.
3. Top with ginger beer and stir gently.
4. Garnish with a fresh pear slice, a cinnamon stick and a thyme sprig in each glass.
Handy Hints for your Spiced Pear Mules
- Add a dash of Angostura bitters for more complexity.
- For extra sparkle, rim glasses with cinnamon sugar before serving.
- The pear syrup can be made up to 1 week ahead and stored chilled.
