Ingredients

250ml white peach purée (or yellow peach if white unavailable)

1 tbsp honey (optional, for a touch of sweetness)

6 small thyme sprigs, plus extra for garnish

1 bottle prosecco, chilled

Method for White Peach & Thyme Bellini

1. If desired, gently warm the peach purée with honey and 2 thyme sprigs over very low heat for 2–3 minutes to infuse. Cool completely and remove thyme.

2. Divide peach purée evenly among 6 chilled coupes or flutes.

3. Top slowly with prosecco, letting the bubbles mix through naturally to create a soft, cloudy appearance.

4. Garnish each glass with a small sprig of fresh thyme.
