There’s no better companion to a superb Christmas feast under the Aussie sun than a fresh, fruity and fabulous cocktail. The ideal pairing the Fig, Berry & Golden Caramel Meringue Wreath or White Chocolate & Ginger Star Cookies from our Season of Christmas 2025 recipe series, these Pink Gin & Rhubarb Cocktails are easy to make and even easier to enjoy.

Prep time: 15 minutes (including garnish prep)
Cook time: 10 minutes (for syrup)

Ingredients
200g rhubarb stalks, chopped (plus 2 long stalks for ribbons)
½ cup sugar
½ cup water
120ml pink gin
400ml soda water or sparkling mineral water, chilled
Ice cubes
1. Make the syrup: In a saucepan, combine chopped rhubarb, sugar and water. Simmer for 10 minutes until the rhubarb breaks down. Strain, cool and chill the syrup.
2. Prepare the ribbons: Using a vegetable peeler, shave long ribbons from fresh rhubarb stalks. Place ribbons in iced water for 5 minutes so they curl naturally.
3. Assemble: Fill each glass with ice. Slide 1–2 rhubarb ribbons down the inside of each glass so they wrap around.
4. Pour 30ml pink gin and 30ml rhubarb syrup into each glass.
5. Top with chilled soda water. Stir gently.
6. Garnish with an extra rhubarb ribbon curled over the top.
Handy Hints for your Pink Gin & Rhubarb Cocktails
- Keep ribbons crisp by storing them in iced water until ready to serve.
- Swap soda water for prosecco to turn this into a sparkling spritz.
- Add a squeeze of lemon juice for a sharper finish.
