Fig, Berry & Golden Caramel Meringue Wreath Recipe

Ingredients

Meringue Base

6 egg whites, room temperature

1½ cups caster sugar

1 tsp white vinegar

1 tsp cornflour

1 tsp vanilla extract

Topping

600ml thickened cream, whipped to soft peaks

6 fresh figs, quartered

½ cup raspberries

½ cup blackberries

2 tbsp golden syrup, warmed slightly for drizzling

Method for Fig, Berry & Golden Caramel Meringue Wreath

1. Make the meringue: Preheat oven to 120°C (fan forced). Line a large baking tray with baking paper. Using a plate as a guide, trace a 28cm circle on the underside of the paper and flip it over so the pencil marks are face down.

2. Using the stand mixer, whisk egg whites until soft peaks form. Gradually add caster sugar, 1 tbsp at a time, whisking until glossy and stiff peaks form and the sugar has fully dissolved. Gently fold in vinegar, cornflour and vanilla.

3. Shape the wreath: Spoon eight even pillowy dollops of meringue around the traced circle to form a wreath shape. Swirl the tops lightly, keeping a rustic, cloud-like finish.

4. Bake: Bake for 75 minutes until crisp on the outside and marshmallowy within. Turn oven off, leave the door ajar and allow to cool completely in the oven.

5. Assemble: Transfer the cooled meringue to a serving platter. Spoon the whipped cream generously over the top. Arrange figs, raspberries and blackberries evenly over the cream. Drizzle with golden syrup just before serving.
