Ingredients
10 medium brioche buns
Ricotta cream filling
½ cup fresh ricotta
½ cup thickened cream
3 tbs icing sugar, sifted
3 tsp finely grated orange zest
½ cup mascarpone
Spiked marmalade
1 cup marmalade
2 tsp Grand Marnier liqueur

Method for Maritozzi with Spiked Marmalade & Ricotta Cream
1. To make the ricotta cream filling, place ricotta, cream, icing sugar, 1 teaspoon of the orange zest and mascarpone in the bowl of a stand mixer.
2. Whisk for 1-2 minutes, until smooth and thickened.
3. To make the spiked marmalade, combine marmalade and Grand Marnier in a small bowl.
4. To assemble the maritozzi, cut a wedge out of the top of each brioche bun, taking care not to cut the whole way through. Discard any excess brioche.
5. Use a palette knife to fill the bun with ricotta mixture, ensuring the top is smooth.
6. Dollop a spoon of spiked marmalade on top. Sprinkle with remaining orange zest and serve with an espresso drink prepared with the De’Longhi ‘La Specialista Maestro’ Coffee Machine.
