In this tempting new recipe series, we show you how easy it is to whip up an Ultimate Easter Feast using the latest kitchen appliances from Harvey Norman! On today’s menu: Seafood Platter.

Seafood Platter Garlic and Herb Oil Ingredients

180ml extra virgin olive oil

⅓ cup chopped parsley

¼ cup finely chopped chives

2 tbsp red wine vinegar

1 long red chilli, optional

1 lobster, halved

1 cup finely grated Gruyère

4 tarragon sprigs, cut in half

6 scampi, whole or halved, cleaned

2 uncooked blue swimmer crabs (about 290gm each), cleaned, cut into 4, legs cracked

4 squid tentacles

8 medium green king prawns

400g pipis or clams

8 scallops in the shell

Pan-fried breadcrumbs, aïoli and lemon wedges, to serve

2 cups small red-vein sorrel leaves

Pre-made salad dressing and micro cress, to serve

Seafood Platter Air-Fried Battered Squid Rings Ingredients

4 small squid hoods (about 180g each), cleaned, cut into rings, tentacles reserved

⅓ cup buttermilk

1 small garlic clove, crushed

1 cup plain flour

½ tsp smoked paprika

Dill and pomegranate seeds (optional), to serve

Seafood Platter Method

1. For garlic and herb oil, place all ingredients in a bowl along with 1 tsp salt. Stir until well combined. Season to taste; set aside.

2. Drizzle a little herb oil on lobster halves. Sprinkle half the Gruyère over the lobster halves, then top with tarragon sprigs and remaining cheese. Place in Tefal Easy Fry & Grill Air Fryer basket and cook on grill setting for 5 minutes or until golden. Remove and cover to keep warm. Repeat with remaining lobster half.

3. Spray remaining seafood with olive oil spray. Run a knife between scallop meat and shell to release scallop from shell.

4. Arrange scampi in a single layer in air fryer basket and cook on air fryer setting at 200°C for 2-6 minutes or until meat is white. Remove and transfer scampi to a plate. Drizzle with a little herb oil and cover to keep warm.

5. Arrange crab in a single layer in air fryer basket and cook on air fryer setting at 200°C for 5-8 minutes or until shell turns orange and flesh is white. Remove and transfer crab to a plate. Drizzle with a little herb oil and cover to keep warm.

6. Arrange squid tentacles in air fryer basket in a single layer and cook on air fryer setting at 200°C for 2-3 minutes or until the squid is white. Remove and transfer tentacles to a plate. Drizzle with a little herb oil and cover to keep warm.

7. Arrange prawns in air fryer basket in a single layer and cook on air fryer setting at 200°C for 5-6 minutes or until prawns turn orange. Remove and transfer prawns to a plate. Drizzle with a little herb oil and cover to keep warm.

8. Arrange pipis in air fryer basket in a single layer and cook on air fryer setting for 4-5 minutes, until shells begin to open. Remove and transfer pipis to a plate. Drizzle with a little herb oil and cover to keep warm.

9. Arrange scallops in a single layer and cook on air fryer setting for 2-3 minutes until scallop meat is white and slightly golden. Remove and transfer scallops to a plate. Drizzle with a little herb oil and cover to keep warm. Repeat with remaining scallops.

10. For sorrel and micro cress salad, place sorrel in a bowl. Pour over dressing and serve scattered with micro cress.

11. To make air-fried squid rings, combine squid rings, buttermilk, garlic and a pinch of salt in a bowl, then chill for 30 minutes. In a separate bowl, combine flour, paprika and cracked pepper. Drain squid from buttermilk mixture. Dust the squid in flour mixture and place on a baking tray, then spray both sides generously with oil. Arrange squid in air fryer basket in a single layer and cook on air fryer setting at 200°C, in batches for 2-3 minutes, until golden. Scatter with dill and pomegranate seeds, if using.

12. Arrange seafood on a platter, sprinkle with breadcrumbs and serve with aïoli, lemon wedges, sorrel and micro cress salad and air-fried squid rings.

Note: When buying the lobster, choose one that will fit in the air fryer basket.
