Treat mum to simple pleasures this Mother’s Day – cuddles, kisses, hand-picked wildflowers, a good cuppa and this sticky orange and maple loaf.

Cook 1 hour 10 minutes
Ingredients
185g butter, softened
2/3 cup raw caster sugar
1/3 cup maple syrup, plus extra to serve
2 teaspoons finely grated orange rind
3 eggs
2 cups self-raising flour
1/2 cup plain Greek-style yoghurt
2 tablespoons orange juice
1 small orange, thinly sliced

Method
1 Preheat oven to 180°C/160°C fan-forced. Grease a 7cm-deep, 11cm x 21cm (base) loaf pan. Line base and sides with baking paper, extending paper 2cm above edges on all sides.
2 Using an electric mixer, beat butter, raw caster sugar, maple syrup and orange rind until light and fluffy. Add eggs, one at a time, beating after each addition. Add flour, yoghurt and orange juice. Beat on low speed until just combined. Spoon into prepared pan. Smooth surface.
3 Arrange orange slices, slightly overlapping, over top batter. Bake for 1 hour to 1 hour 10 minutes or until a skewer inserted into the centre of loaf comes out clean. Stand in pan for 10 minutes. Transfer to a wire rack lined with baking paper to cool.
4 Drizzle loaf with maple syrup. Serve immediately.
